1 Lb Penne
Red Peppers Diced
Red Onion Diced
Shallots Diced
Broccolini Blanched and Chopped
Chopped Garlic
Salt and Pepper
Arriosto
Arugula Pesto
Goat Cheese
White Wine
Vegetable Stock
Roux
In a hot pan add oil and then sautee Shallots, Peppers, Onion, Garlic and Brocoolini. Salt and Pepper to taste. Deglaze with White Wine and add vegetable stock. Add roux and reduce.
Finish with Goat Cheese and Arugula Pesto, add pasta. Toss and serve immediately
