Pastry Cream



Unbridled Chocolates Pastry Cream

Super Delicious, much like a very rich pudding.
This is fairly simple - be careful to keep stirring so the dairy does not clump and burn.

YOU NEED
   1 Quart of Heavy Cream
   1 Quart of Milk
    3 Tsp Vanilla
    5oz Corn Starch
    1lb Sugar
    6oz Butter
    1 Tsp Salt
    6 Eggs

1 - Mix the Corn Starch, Sugar & Salt in mixing bowl
     Add Eggs (one at a time) and mix thoroughly

2 - Boil the Milk & Cream Together

3 -  Add 1/3 boiled cream to egg mixture & beat slowly

4 - Add Egg mixture to remaining cream & boil for 5 seconds
     You must stir thoroughly at this stage.
     Dissolve lumps with a hand mixer if necessary

5 - Add butter and Vanilla, stir very well.

6 - Pour in to bowls, between cake layers, in to pie crusts etc

Make it Chocolate..... - Add 3/4c cocoa powder to mix AFTER removing from the stove.
