Peppermint Chocolate Chip Ice Cream
A mouthful of minty goodness in every bite, this is a great holiday treat or a perfect after-dinner dessert. Peppermint oil is well known for its medicinal properties for soothing tummy indigestion. That’s why most restaurants will offer you a mint at the end of your meal.
Yield: 1/2 quart
1 (131/2-ounce) can coconut milk
1 frozen banana
1/4 cup honey
1 teaspoon organic peppermint flavoring
1/2 teaspoon salt
1/4 cup dark chocolate pieces
Place the coconut milk, banana, honey, peppermint, and salt in a blender and mix until smooth. Add the chocolate pieces and mix until combined.
Pour into an ice cream maker and freeze until done.
